We’re heading back to school and for many parents, this is when things go back to “normal”. When schedules are hectic, we all need recipes so we can skip the drive thru and still get dinner on the table faster. Here are a few of my favorites that the kids will love and so will you. These are all baked, but I assure you that you won’t miss the frying. These are all perfectly crispy and tasty without the mess.
Pick up a big pack of chicken tenderloins in the market. You can make these ahead and freeze them so you just pop them in the oven or microwave to reheat.
Sesame Ginger Chicken Fingers
1 lb boneless chicken breast or tenders
2 tbsp olive oil
1 packet Healthy Solutions Spice Blends Sesame Ginger Tuna
1/2 cup milk
1 cup plain Panko crumbs
Preheat oven to 350°F. Combine Panko crumbs and spice blend in a bowl. Set aside. Cut chicken breast into chunks or strips. Dip each piece into milk, then into Panko and spice mixture. Spray bottom of pan or baking sheet with non-stick spray. Cast iron works great for crispy chicken. Place chicken pieces in single layer in pan. Drizzle with olive oil. Bake for 20-30 minutes until chicken is cooked through and crispy.
Crispy Baked Chicken Nuggets
1 cup panko bread crumbs
1 Tbsp olive oil
1 Tbsp Healthy Solutions Spice Blends Pork & Poultry Rub
1 chicken breast, cut into bite sized pieces
1 egg, beaten
1/2 – 1/3 cup whole wheat white flour
In a medium saute pan, heat the olive oil on medium heat. Add in the panko bread crumbs, stir to combine with the olive oil and toast for 5-8 minutes until the panko is golden brown. Transfer to a bowl and allow to cool. Mix in the tablespoon of Pork & Poultry Rub.
Preheat oven to 400 degrees and line a baking sheet parchment paper and set aside. Place the flour, panko and egg in separate dishes to prepare for breading. Season the chicken breast with salt and pepper and coat with flour. Dip into the egg and then into the bread crumbs taking note to cover each side. Place on the prepared baking sheet. Continue until all pieces of chicken are breaded.
Bake for 20 minutes or until the chicken is cooked through. Serve with your favorite dipping sauce.
Chicken Fingers 3 Ways
3 boneless chicken breast halves
4 tsp. Healthy Solutions Spice Blends Cajun Seafood
4 tsp. Healthy Solutions Spice Blends Shrimp Scampi
4 tsp. Healthy Solutions Spice Blends Pork & Poultry Rub
1 cup Panko crumbs
1/2 cup skim milk
Preheat oven to 375°. In separate bowls, combine 1/3 cup Panko crumbs with each of the three Healthy Solutions Spice Blends. Cut each chicken breast half into strips. Dip chicken in skim milk, then roll chicken in the breadcrumb mixture. Place chicken in shallow baking pan prepared with nonstick cooking spray. Bake at 375° until chicken is completely cooked and chicken fingers are golden and crispy. Great served with a side of garlic smashed cauliflower.
